With the release of iOS 15, Apple introduced the Live Text feature, which allows you to extract text from images and screenshots. You can use this feature to capture screen recordings with text annotations. Simply take a screenshot of the desired screen, open the screenshot in the Photos app, tap on the Live Text icon, and select 'Copy All.' Then, open a Notes app or any other text editor, paste the copied text, and start screen recording while highlighting the relevant text.
